Speckled Butter Bean Hummus

Ingredients:

1 pound of SWP speckled butter beans (cooked and cooled)

2 cloves garlic

2 Tbsp lemon juice

1/3 cup Olive oil

1 Tbsp fresh thyme leaves

Salt & pepper to taste

Directions:

Place all the ingredients into a food processor or blender.  Pulse until well combined and smooth.  Adjust the salt & pepper to your taste.

It’s great with fresh, raw vegetable crudite’ or pita.  Enjoy!
